Christmas Bakery - "Kokosmakronen" Coconut Macaroons




It truly is the most wonderful time of the year!
To celebrate the festive season accordingly I decided to make my first ever Blog Post an unhealthy but yummy one!




Especially here in Germany "Plätzchen" are essential for the festive season. So I got together with friends of mine and we spent the evening baking.
The options are endless. There are no limits to your creativity when it comes to Plätzchen. I'm more on the traditional side with that topic, so we went for two all time classics. "Vanillekipferl" and "Kokosmakronen".

Coconut Macaroons ("Kokosmakronen")

Coconut Macaroons are equally tremendously delicious and extremely easy to make. The vegan version is even simpler than the traditional "non-vegan" one. 

You will need:

1 cup of coconut flakes
1 cup icing sugar
2 tbl. spoons ground flax seed
2-3 tbl. spoons water
24 wafer papers
optional:
vegan chocolate

Instructions:
preheat your oven to 160°C (320°F).
Mix all your dry ingredients together. Yes I am a firm believer in seperating dry from wet ingredients. Mix ground flax seed with water, this will serve as our egg white replacer. You are free to use any other known egg replacer you deem fit. I just prefer ground flax seed because it gets that very egg-y texture. Spread the wafer papers across a laid out baking paper. Throw together all wet and dry ingredients and mix t together thoroughly. If your mixture seems too dry, just add water and/or flax seed. Once the ingredients are well mixed, rip out little chunks and form little snow balls which you will then place on the wafer papers.
Let it bake for a good 20 minutes, then take it out and let it cool for a few hours. Coconut Macaroons are the most delicious when served 1-2 days after baking. If you want you can melt vegan chocolate and pour it over the little snowballs.
There you have it. Delicious cruelty-free Coconut Macaroons.
